Pumpkin Pecan Muffins

Pumpkin Pecan Muffins

(Inspired by this pumpkin muffins recipe)

Makes 2 dozen 
Freezes great!

Ingredients:
3 1/2 cups whole wheat flour

1 cup sucanat

1 cup Erythritol powder (or 2 cups sucanat or 2 cups erythritol and not sucanat )

2 tablespoon baking powder

1/2 teaspoon salt

2 tbs ground cinnamon

1 can pureed pumpkin ( do not use     pumpkin pie mix)

1 cup unsweetened original almond milk 

4oz unsweetened apple sauce 

2 tablespoons maple syrup

1/2 to 3/4 cup crushed raw pecans 

Sucanat is a whole sugar that is dehydrated. 

Erythritol is an antioxidant natural sweetener with health benefits

Add dry in one bowl, add wet in one bowl. 

Combine wet to dry, mix, and fold in pecans. 

Bake at 400° for 20 minutes or so 

Let cool completely and freeze the rest in a freezer bag. Heat up for 20 seconds in the microwave and enjoy. 

Great for diaper bag snack or packed lunch.
