No-Bake Coconut Oat Energy Balls

No-Bake Coconut Oat Energy Balls (oil free, gluten free, refined sugar free)

It’s summer and i do NOT want to use the oven! But we NEED cookies 😉 So, no-bake balls it is!

Great snack or treat for kiddos and perfect for a school lunch box.

 

 

My toddle sous chef came to help. Or maybe just eat 

No-Bake Coconut Oat Energy Balls (oil free, gluten free, refined sugar free)

Makes: 15-20 balls

INGREDIENTS:

  • 1 cup whole rolled oats
  • 1 cup unsweetened shredded coconut
  • ⅓ cup ground flaxseed
  • 2 Tbs almond flour or oat flour
  • ½ cup unsweetened unsalted nut butter (almond or peanut)
  • ⅓ cup maple syrup
  • 1 Tbs brown rice syrup (It has a great honey like sticky thick consistency.)
  • ¼ cup vegan mini chocolate chips (i like to use lilys stevia sweetened dark chocolate ones. But you can also get enjoy life vegan chips or for a caffeine free option choose grain sweetened carob chips!

INSTRUCTIONS:

  1. Combine the dry in a large bowl.
  2. Combine the wet in a small bowl.
  3. Add the wet to the dry. Take your rings off and get your hands in there!
  4. The thing about no-bake balls is all the rolling. So grab a stool and get to work. Especially if you double it like i do. Roll into golf ball-sized balls.
  5. Store in a lidded container in fridge or freezer. (They last a few weeks in the freezer if your family doesn’t eat them all every day). Can transfer to a freezer bag after they are hard if you prefer.
