Mexican Zucchini Boats

Mexican Zucchini Boats
Yield 12 Boats

Ingredients

6 Zucchini (ends chopped and sliced down the length and gutted leaving edges on all sides)

2 Bell Peppers (diced small)

1 Lime (1/2 for filing, 1/2 for guacamole)

4-6 Avocados (guacamole )

2 cans Black Beans (smash one up roughly)

2 Tbs Tomato Paste

Seasoning: onion powder, minced garlic, Chipotle powder (for spicy), cumin, thyme or oregano, sea salt.

Nutritional Yeast (sprinkle on top before baking)

Fresh Cilantro (about 6 stalks. removed leaves and chop. about 2 Tbs)

4 oz Can Diced Green Chilis (mild)

Directions

This makes the exact amount of filing to stuff 6 large zucchini. making 12 Boats.

In a large bowl add the paste, seasoning, mix up. mix in the diced chilis. mix in cilantro, mix in the peppers.

mix in the whole beans and smashed. mix in lime.

(try not to eat it all 😉 )

Arrange Zucchini Boats on cookie sheet and stuff them.

Top with Nutritionals Yeast and Sea Salt.

400° covered for 45 minutes. uncovered for 15 minutes

My comments:

top with jalapeños and homemade guacamole.
serve with quinoa or rice if you like.

guacamole is 4 to 6 avocados roughly smashed with 1/2 lime and sea salt to taste.

can add a a little cumin and cilantro if you want.
