The original recipe called for oil, i subbed for smashed banana. Can also use unsweetened apple sauce (I was out!). Worked great! These muffins were moist and delicious. 

Instead of dried fruit in the recipe I wanted something more delectable so I subbed for Stevia Sweetened Vegan Chocolate Chips. 

My toddler sous chef mixed the batter 

Ingredients:

  • 1 cup unsweetened almond milk
  • 1 tbsp ground flaxseeds
  • one small ripe smashed banana
  • ¼ cup pure maple syrup (Could use date paste as well 1:1 )
  • ½ tsp alcohol free vanilla extract
  • 1¼ cups whole wheat flour
  • ¼ cup almond flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon 
  • 1¼ cups cooked quinoa 
  • ½ cup  stevia choc. chips 

Batch cook extra quinoa ahead of time and use for buddha bowls for lunch. Keeps in fridge 1 week. 

Mix dry in a bowl. Mix the milk with the flax set aside 2 minutes to gel. Add Wet in a bowl then add the flax milk. Combine wet to dry. Mix. Fold in the choc. Chips. 

Bake 350° for 20 minutes.

Let cool and freeze leftovers in freezer bag! Great for lunch box or diaper bag treat.
