No-Bake Chocolate Banana Peanut Butter Energy Balls (sugar free, oil free, gluten free)
Makes: 20
INGREDIENTS:
- 1 1/2 cups Quick Oats
- 3 Tbs Toasted Carob powder (caffeine free chocolate) or Cocoa powder
- 1/2 cup unsweetened Coconut flakes
- 1 tsp Cinnamon
- 3 Tbs Natural Peanut Butter
- 1/2 cup Date Paste (made by processing soaked and pitted dates with a little water to form a paste)
- 1 smashed Banana
- 1 tsp Vanilla extract
*you can try subbing the date paste for 1/4 cup maple syrup or raw agave. We haven’t tested this yet. Let us know in the comments if you do.
DIRECTIONS:
- In a bowl combine dry ingredients
- In another bowl combine wet ingredients
- combine dry with wet
- roll into balls
- freeze
- enjoy

So yummy! I subbed maple syrup and Skippy pb because we had them on hand and just added oats until the batter was a good consistency!
