Simple easy delish!
Great to take to a potluck to share! Or for lunch for the week.
INGREDIENTS:
- 1 lb tri-color rotini, cooked
- 1.5 cups shredded carrots
- 1.5 cups shredded purple cabbage
- 1 bunch green onion
- 1/2 cup raw ground peanut butter
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 Tbs sesame oil
- 1 Tbs Agave
- 1/4 cup water (add more of the dressing needs thinned more. Depends on the peanut butter you use)
- 1 tsp salt
- 1/4 tsp black pepper
- Raw peanuts for garnish (optional)
INSTRUCTIONS:
- boil pasta and drain. Put cooked pasta back into the pot.
- Add the shredded carrots, shredded cabbage, and sliced thin green onion (i like to use kitchen scissors).
- Mix the dressing ingredients together using a hand blender or wisk in a dish, then pour over pasta and veggies and stir well.
- Put the whole thing in a lidded dish in the refrigerator for an hour and serve cold with a little chopped peanuts on top. Enjoy!
